Chef Abdulaziz Abu Fahd was at a spice shop, where he explained a recipe for grilling spices that includes a mix of ingredients: "Chinese cinnamon or sweet spice, cloves, cardamom, a stick of cinnamon, a piece of nutmeg, ginger, garlic powder, onion powder, rosemary, bay leaves, black pepper, paprika, mustard or mustard powder, to tenderize the meats."
Chef Abdulaziz Abu Fahd added: "You should add olive oil, 2 fresh tomatoes, onion water to enhance the flavor, lemon, vinegar, hot pepper, and a tablespoon of sugar for even cooking of the meats and to give them a distinctive golden color."
He continued: "You can add this marinade when preparing grilled dishes; it is suitable for chicken, hawawshi (a type of Egyptian sandwich), pigeon, kofta, and red meats."
